One part of the fabled Nasi-Goreng-Sate Padang-Martabak troika, perhaps the most famous of its kind in this city of kaki limas. Hani (“Mas Hani” as the owner is known) is an energetic forty-something who hails from Tegal and is upholding a 22-year old legacy. It was his older brother who brought this wonderful recipe over to Jakarta: nasi goreng with chicken, meatball and sausages, with just the right degree of moisture and sweetness, gelled together with the smoothest and slickest homemade minyak jelantah. Yes, the secret is definitely in the oil.
